No worries, I missed it myself at first.
Maybe just swap her STR and CON scores?

I started with paladin. But, I didn't see the requirement for 13 Str for paladin. Ok. Well, back to the drawing board I guess. Ughh, I suck at this lol.
It's not you, mate. It's WotC that has a fetish for odd numbers and needlessly complicated rules. If I may give you an advice: start as a Paladin and then multiclass to Sorcerer so you have heavy armour proficiency; put your stat boni in STR and CHA and pick Resilient (CON), your scores should look like this: STR 14(+1) DEX 11 CON 15(+1) INT 10 WIS 7 CHA 16(+1). You will have proficiency in CON, WIS and CHA saves and your first ASI should go in STR and CHA. This would give you a well-rounded and quite robust character.

I am contemplating the Con to Str change. I just got an idea for the character using grace and quick movements rather than brute force or strength. I want to think on it a bit more, but that will likely be the route I go unless inspiration for something altogether different strikes me. I knew their were multiclass requirements, but didn't realize the same requirements were for base classes. At least this has been quite the learning experience for me.

Changes made. I changed Str and Con, adjusted HP, saves, skill mods etc.

Okay, that all looks good. Just one more thing:
Not sure if you realize this, but when you multi-class, you don't necessarily get all of the proficiencies of the new class. This is covered in the PHB, on page 164, under "Proficiencies." It states, "When you gain your first level in a class other than your initial class, you gain only some of the new class's starting proficiencies..."
Assuming she started as a Paladin, then multi-classed to Sorcerer, that means she gets none of the Sorcerer proficiencies.
On the other hand, if she started as Sorcerer and then multi-classed to Paladin, she only gets proficiency in light and medium armor, shields, and simple and martial weapons.
You said she was Paladin then Sorcerer, but if you want to swap that now, let me know. Otherwise, I'd say you're done.
