Assuming they are trained, and as they are in use by an order of knights, I have no reason to believe they aren't. A controlled mount can move & act on it's rider's initiative. Leaving the rider with all their actions (though I wouldn't dismount ) ... however the mounts only actions are Dodge, Disengage, or Dash. A standard 5E griffon has a flight speed of 80', so you could theoretically Move 80' & dash 80' to close ... I only needed to get to within 30' so I had my mount Dodge (which would only affect attacks against the mount, not it's riders) ...

I'm not sure what the rules for aerial mounted combat are in 5E. The PHB is somewhat vague on the matter. Can Iroas cast spells while mounted? Can he dive bomb the target? Does the mount get its own actions? In my book, the Hippogriff is basically a big furry skateboard. It's mostly just a movement upgrade, rather than a brand new set of combat rules. According to the PHB, "A knight charging into battle on a warhorse, a wizard casting spells from the back of a griffon, or a cleric soaring through the sky on a pegasus all enjoy the benefits of speed and mobility that a mount can provide." So you can cast spells. As for dive bombing, that's basically just "move down, cast a spell, move back up," which you could definitely do. You probably wouldn't get a special bonus for it.

Okay. So it basically works like using a chocobo mount in Final Fantasy Tactics. It improves your movement, but otherwise that's it.

You don't currently know Fire Bolt, just Chaos Bolt, which does actually change element by the roll. And you can make it fire, if you roll a three on one of the damage dice.
