Holy Order of the Stars requires a WIS of 9, and your lowest score is 10, so that's a definite yes.
As for Irda, the minimum/maximum requirements are: STR - 12/18 DEX - 8/19 CON - 12/15 INT - 5/19 WIS - 10/18 CHA - 15/19
And you get -3 to CON and +1 to DEX, INT and CHA.
So one of those 16s would need to go into CON. It will drop to 13, but still be over the 12 minimum.
You could put the 14 in CHA (bumping it up to +1 to reach the minimum), and then stick the other 16 in WIS to get the XP bonus for being a priest*. The 13 would need to go into STR, and then the two 10s would be left for DEX and INT, so yeah, that's very doable.
(*Each class has a 'prime requisite' and if your score for it is 16 or higher, you get a 10% XP bonus.)

As for her story I had this in mind, tell if it makes sense for the setting (I have yet to read deeply into the lore). I was thinking a young rebellious Irda priest, who started to feel as life on the island was wearing her thin. She didn't understand why a part of her people had to live a reclusive life on an island, and the others were reduced to a race of violent warmongers, so she decides to escape and have a chance to explore the world and find answers her elders weren't able to give to her.
I saw the rest of the group was thinking about having already established bonds, maybe she can be an hired priest who offers her service in exchange for a chance to travel with them and see all the different places they go.
I was thinking about giving her the True Neutral (or maybe Chaotic) alignment, is there any restriction about this or the Gods she could chose? And does the story fit the setting?

A fighter with a STR of 11 who can't wear anything heavier than leather. A mage with 1 HP. Just really go nuts. Oh right, the third +1 is for DEX not WIS, okay. The backstory works great. Most Irda encountered in the world are younger ones who are rebelling a bit, and want to sort of explore the outside world and see if it's as bad as the elders say. (Similar to the Amish, where the younger folk will actually go into the outside world for a bit before returning home to settle down.) Of course, she'll likely be in disguise as another race while she's adventuring--human, elven, or half-elven most likely, but any will do, since if people actually saw an Irda walking around, it would likely cause some problems for her. As far as alignment goes, yes, your alignment will limit which deities you can serve. For True Neutral, you'll be limited to Habbakuk, Branchala, Gilean, Sirrion, Reorx, Chislev, Zivilyn, Shinare, and Lunitari. For Chaotic Neutral, it's the same as above, but without Chislev.

Would you rather DM or Play? Oh, definitely DM. Matt4, I need to issue a correction. I had thought all of the HotS classes only required a WIS of 9, but it turns out I was wrong. Some had higher or additional requirements. Branchala requires CHA of 12, so you do pass for that one. Gilean requires INT of 13, so you don't qualify for that one. Sirrion requires WIS of 17, so you don't qualify for that one. Chislev requires WIS 12 and CHA 15, so you can do that one. Zivilyn requires INT 15 and WIS 16, so he's out. Lunitari requires INT 15, so she's out. So the revised lists are now: For True Neutral, you'll be limited to Habbakuk, Branchala, Reorx, Chislev, and Shinare. For Chaotic Neutral, it's the same as above, but without Chislev.

I'm studying the various priesthoods before choosing a God, is there anything I should know about these? Are those just the equivalent of the Domains from 5e?

Yes, each priest has different abilities, access to equipment and even spells.
First, in 2E priest spells are divided into spheres. Each priest class has access to certain spheres. Major access means you can cast any spell from that sphere at the appropriate level. Minor access means you can only cast spells from 1st to 3rd level from that sphere. As an example, if a class has major access to the healing sphere, that means one day (if you get high enough in level), you could conceivably cast Heal. If the class has minor access to the healing sphere, then Cure Moderate Wounds is the best you'll ever get. If you have no access to the healing sphere, then that class cannot cast healing spells at all.
I'll give you a brief run down of their abilities:
Habbakuk Priests of Habbakuk can only use non-metal weapons and armor only. They have major access to All, Animal, Creation, Divination, and Elemental but minor access to Healing and Weather. They cannot turn undead. At 3rd level, they can cast Create Food and Water once a day. At 5th level, they can cast Commune with Nature once a day. At 7th level, they can cast Heroes' Feast, Speak with Animals, Forbiddance and Conjure Animals once a day each.
Overall, Priests of Habbakuk are closer to traditional Druids than Clerics. They're pretty useful to have on the road, but they physical combat skills are limited, they're healing is weak, but their abilities would be quite useful in the wilderness.
Branchala Priests of Branchala can learn any weapon, but can only wear non-metal armor. They have major access to All, Creation, Healing, Plants, Sun and Weather but minor access to Animal and Charm. They cannot turn undead, but get a +2 to any artistic proficiency check they make. At 1st level, they can cast Detect Snares and Pits once a day. At 2nd level, they can cast Slow Poison once a day. At level 3, they can cast Create Food & Water and Neutralize Poison once a day each. At 8th level they can cast Quest once a day. At 9th level they can cast Aerial Servant once a day.
Overall, Priests of Branchala are versatile. They get decent spells and weapon selection, but not great armor, so are probably better suited to long-range combat. They make decent healers.
Reorx Priests of Reorx can only wield hammers and axes; they can only wear metal armor. They have major access to All, Combat, Creation, Elemental, Guardian, Protection and Sun, but minor access to Healing and Summoning. They cannot turn undead exactly; rather, they can turn any creature that can drain energy, whether undead or not. They also get a +2 bonus to any crafting proficiency check.
Overall, Priests of Reorx make good front-line fighters, minor healers and decent battle-casters. Their weapon selection is extremely limited, though.
Chislev Priests of Chislev can wield slings, clubs, sickles, darts, spears, daggers, and scimitars; they can wear any non-metal armor. They have major access to All, Animal, Elemental, Healing, Plants, Sun and Weather but minor access to Charm, Combat and Guardian. They cannot turn undead.
Overall, Priests of Chislev are like druids, but without the shapechanging.
Shinare Priests of Shinare can only wield bludgeoning weapons; they can wear any armor, but only if it is crafted by a priest of Shinare. They have major access to All, Charm, Creation, Guardian, and Protection. They have minor access to Combat and Sun. At 3rd level, they can use Locate/Obscure Object once a day. They cannot turn undead. They earn 1 XP for every 10 STP of treasure they earn or acquire.
Overall, Priests of Shinare have decent combat abilities, but their spellcasting is limited (they cannot heal at all).

Damn you, Daos, you said this was simpler than 5e but there are a lot of limitations and requirements to meet! Now I have to make it all fit together, for now I retract my statement about her Alignment, I'll study all the various Gods, spheres, spells, etc... and then decide u.u (I finally worked it out where to find each God's requirements). But first, when I asked about "priesthoods" I actually meant something else. If you check the PurpleWorm website you linked to me earlier there is a whole section that contains more than sixty priesthoods (Agricolture, Arts, War, etc.) with each of them having their own requirements, proficiencies, etc... Do I ignore those or do I have to choose one which is fitting of the God I'll eventually choose? (Like for example the Art priesthood if I choose Branchala).

If you're referring to the section in The Complete Priest's Handbook, that is meant for a DM that is designing a new priesthood from scratch. The HotS priest classes found in the Tales of the Lance were designed using those rules. So no, you can ignore those, they aren't relevant here.

Ok, good. One less thing to worry about. Another question: is there a way in game to improve my ability scores? I saw there are some spells that can be cast only with a Wisdom score of 17/18 or higher. (I know we'll probably not get that far, but I'm curious about it.)

It is theoretically possible, yes, with magic. There are magic items, for instance, that can boost ability scores. There are also some spells that can do it, temporarily. Old age can raise some and lower others. And there are the initial racial ability adjustments during character creation. And of course, there's always the Wish spell. Beyond that, though, if you're referring to something like 5E's ASIs, then no. For the most part, ability scores are pretty static.

Right. It also improves your THAC0 (improving your ability to hit), improves your saving throws, and gives new proficiencies and sometimes new abilities, depending on the class. Not every level, though. Second Edition has a lot of what was later coined as 'dead levels.' The term didn't exist back then, though, and was considered perfectly normal. Most level-ups will just give you HP and new spell slots.
