I think there's some confusion about Dorias' NWPs.
My kit NWPs are these:
Ancient language (Ergothian 13), dancing (16), etiquette (15), poetry (11)
My picks (3 base +3 Int +1 from levelling =7) were these: Cantrips (11), local history (Southern Ergoth 15), reading/writing (modern languages 14), riding (horse 12), seamanship (17), singing (15), swimming (13)
Dorias seems to have lost Ancient Language and Singing, and gained Ancient History and Modern Language (Ogre). The last shouldn't be necessary, since the PHB says that everyone starts with their native language, which in Dorias' case I assumed would be Common. That should leave 3 language slots for Ergot, Elven and Ogre without dipping into NWP territory.

Under Class Abilities, you've included the following:
Influence Reactions, Rallying Poem, Counterpoem, Legend Lore
In the Complete Bard's Handbook, only True Bards get these abilities. The other kits instead get four other abilities, which in the Gallant's case are the ones you've listed under Kit Abilities: Essence of Purity, Code of the Gallant, Romantic Appeal, Poetic Charm

I did some reading up, so I know my stats aren't high enough (as a Qualinesti) to be a specialist Wizard. But hey, Mages get a Familiar!
My low scores are probably going to go in Strength and Charisma. My character is really not a people person.

Not necessarily. You could be a specialist, you'd just have to put that 17 into something other than INT. So for instance, if you wanted to be an Abjurer, you could put the 17 in WIS and the 13 in INT, and thus qualify. But it's a matter of choice whether that's worth it or not. Having an INT of 13 means you'd only have a 55% chance to learn new spells. (Granted, a specialist gains a +15% to their chosen school, bumping that up to 70%; but they also suffer a -15% to every other school, dropping it to 40%.)
Anyway, don't forget, Qualinesti get +1 DEX and -1 CON, and also receive one free NWP that is dependent on whichever House they grew up in. A partial list includes gardeners (agriculture), limners/gilders (artistic ability), mariners (seamanship), traders (bartering or appraising), wildrunners (survival or tracking or hunting), builders (carpentry, masonry), mysticals (religion, spellcraft), orators (persuasion, oratory), and weavers/sewers (seamstress/tailor, weaving).

I was thinking Str 16, Dex 6, Con 16, Int 12, Wis 14, Cha 15.
But then you mentioned Caelin's grandfather and I laughed. Then the thought of them being a Knight, given his distaste for them. But damn, the requirement for the Knightly Orders lock me into a 6 Charisma ... so I may need to flip my stats around.
